Flip Out! My Favourite Coconut and Oat Pancake

In honour of Pancake Tuesday coming up next week, I thought this is the perfect time to resume blogging with my favourite pancake recipe! These were inspired by a cookie recipe I used to make all the time from my old Home Economics book. Minus the sugar and butter!

These have become my go-to cooked breakfast in the mornings. They are so, so quick and easy to make and really delicious. These are high in fibre and protein and sweetened with fruit and honey.

Ingredients: Makes 2 pancakes

  • 50g porridge oats
  • 35g desiccated coconut
  • 1 tbsp honey
  • 1/2 tsp baking powder
  • 3 eggs
  • pinch cinnamon
  • 1/2 tsp vanilla extract
  • blueberries (optional)
  • coconut oil for frying

How to:

  1. Blend all ingredients until smooth.
  2. Pour a thin layer into preheated pan (medium heat), cooking 2-3 minutes per side until golden.
  3. When you're finished add the blueberries to the pan and cook until the juices begin to appear and serve alongside.
